This recipe happened because of a craving.

One day, I felt like eating sardines with bread, but I didn't want the usual sardines straight from the tin and spread on bread. I wanted something a little richer, creamier, and more interesting.

So I started experimenting in the kitchen with what I already had at home.

I wasn't even sure the kids would like it.

I don't make sardines very often for them because I vaguely remember trying it once in the past and not getting a very enthusiastic reaction. This time, however, I thought that if I turned it into a sandwich-style spread, they might enjoy it more.

To my surprise, they did.

I've made it twice already, and it has become one of those quick meals that comes together easily when I don't feel like cooking something complicated.

Ingredients


  • 2 tins of sardines (I used one with pepper and one without pepper)
  • Margarine
  • A little vegetable oil (optional)
  • Onion, finely chopped (optional)
  • Salt to taste
  • A little Maggi seasoning
  • Pepper (optional)

Method


Remove the sardines from the tins and place them in a bowl.

Mash them lightly with a fork. Don't mash them completely into a paste. I like leaving some small pieces so you can still feel the fish when eating it.

Add the margarine and mix it into the sardines.

If the mixture feels too dry, add a little vegetable oil. Depending on the brand of sardines you use, some come with plenty of oil while others are much drier.

You can also add a tiny splash of water if needed, but only a little.

Season with salt and a little Maggi to your taste. If you're using plain sardines and want some heat, you can also add pepper.

Finally, add the finely chopped onion and mix everything together.

Taste and adjust the seasoning if necessary.

Spread generously on bread and enjoy.

How We Ate It


The first time I made it, it was simply because I was craving something different.
