I found this recipe I'm sharing with you about 3 years ago on a TikTok video made by Lucas Filatrio, a Cameroonian food content creator. I have been enjoying this recipe, which is very delicious and made with a few ingredients that are not hard to find. Moreover, it doesn't need tomatoes, so it changes the routine of tomato stew.
That said, let's get into the recipe.
No-Tomato Meat Sauce | Cameroon Recipe
Ingredients
You'll need
- Meat
- Leeks
- Onion
- Garlic
- White pepper
- I used a mixture of green spices, celery, parsley, and cutmanjo or basil, which is different from the original recipe, where he used just parsley, if I remember correctly.
- Pepper (optional)
- Green pepper (it wasn't in the original recipe I saw. I added it to mine just for extra flavour)
- Seasoning
- Vegetable oil
Preparing the ingredients
Wash and slice the meat into the sizes you desire. The bigger the size of your meat, the longer it will take to cook. The reason I cut my meat smaller.
Wash all the ingredients and slice them into bits.
Grind a good quantity of white pepper (poivre blanc) to give it a good taste and flavour.
Cooking
Put oil in a pan or pot and add the meat. Let it fry for some time without letting it get dry.
Add the sliced ingredients and fry some more till they are soft, then add some water, white pepper, and seasoning.
Cover the pot or pan and let it boil or cook.
Keep adding water and cooking till the meat is ready.
Serve with baton-de-manioc, plantain, rice, or any food of your choice.
