Cameroon Duck Stew Recipe
Duck meat is very tasty. Yes, it is.
This is my first time cooking duck and everyone enjoyed this stew.

Ingredients
Tomato paste
Tomatoes (fruit)
Carrots
Green beans
Onion
Leeks
Ginger
Garlic
Green pepper
Pepper
Green spices
Poivre blanc de Penja (white pepper)

Preparation
Boil the tomato paste till it is no longer sour. At the end add the sliced tomato fruits to it and boil again. I do this when I use more of the sachet tomato paste. I add the fresh tomato to give the stew a fresh tomato flavour.
Slice and boil the duck with some chop onion and leeks.
Clean, wash and slice all ingredients while the tomato paste and duck are boiling. Chop garlic and ginger into very small bits.
Start by frying the green spices, onion, green onion or leeks.
Then add the tomato paste and fry till thick.
Add the slices of the boiled duck to it and fry them together. I did fry the duck in the stew for long because my duck wasn't quite done when I stopped boiling it. So I fried it for long with the tomatoes to catch up. While frying I covered the pot and opened it to stir from time to time.
After properly frying add the carrots, green beans and the rest of the ingredients and fry for a few minutes before adding water to it. Also, add the stock from the boiled duck. Add your salt and Maggi then allow the stew to boil and blend.
Stir from time to time till it is ready.
