How To Sautée Spaghetti With Little Or No Tomatoes

Most of us sautée spaghetti with tomatoes. But when tomatoes become expensive, it is hard to figure out how to still make your spaghetti tasty and enjoyable. If that's your problem then you are in the right place. I'll show you how to make tasty and delicious spaghetti with little or no tomatoes.

For this recipe, I used the following ingredients.

Spaghetti

Vegetable Oil

Fresh green spices (celery, parsley, cutmanjo)

Tomatoes (which you may use or not for this recipe. I had a few tomatoes so I added to it but it didn't make any difference. So you can totally succeed to make this recipe without tomatoes)

Seasoning (salt and Maggi)

Quail meat and eggs can be replaced by fish or any other meat you have. You may also cook it without meat or fish if you wish)

Cooking


- Heat some salted water and put in the spaghetti when it starts to boil. I don't break my spaghetti before boiling because I find it easier to roll it on my fork when eating. 

- Wash and slice all the fresh ingredients (green spices, leeks, onions and tomatoes if you are using them too).

- Cut the quail or any meat of your choice into small pieces and boil with the sliced ingredients in a little water, Maggi and salt. I only got the idea of doing this while I was cooking. I initially boiled the meat with just leeks before I decided to add the rest of the ingredients. I wanted the ingredients really soft and ready. I also wanted the taste and smell of the ingredients to come out so it was better to boil them first than fry them directly.

- When spaghetti is ready, strain it and keep it aside. Also, keep a little sliced raw onion aside.


- When your boiled ingredients are ready, heat some oil and fry them alongside the meat for a few seconds then add the spaghetti and stir with a wooden spoon to prevent the spaghetti from breaking.

- Add a little water or stock from the boiled meat and ingredients to enable the seasoning to penetrate and spread evenly in the spaghetti. You may also add some more seasoning to your taste. Stir well and allow to cook with low heat till the water is dried off.

- Mine was served and eaten with fried quail eggs and bread. Yummy!
