But the okro soup we are cooking today takes a little longer because we are adding egusi to it.
This is how to cook egusi Okro soup the Cameroonian way
Ingredients
Okro
Egusi
Meat/fish
Ginger
Garlic
Tomato
Onion
Leeks
Crayfish
Preparation
Wash and boil the meat
Wash and slice the okro and keep it aside
Slice the tomato, onion, and leeks. Grind the ginger and garlic to a smooth paste.
Fry all the ingredients in the pot
When soft, add the egusi and some water
Cover the pot and let it cook but stir from time to time.
When the egusi is ready, add the okro, crayfish and meat (plus stock),
Add seasoning and let it boil till it's ready
